Banana Bread with Chocolate Chips (vegan)

Of all the banana bread recipes that I have tried over the years, this one is my absolute favorite one. It's great as a sweet breakfast treat or serves as a great snack throughout the day. It's moist, sweet and comes with a twist of dark chocolate. Personally I really like the bread when it is still a bit warm and enjoy together with some butter or peanut butter on top.
Banana Bread with Chocolate Chips Recipe
Vegan
Ingredients
0,5 dl plant milk
1 tsp apple cider vinegar
3 large ripe bananas
0,8 dl maple syrup
0,5 dl melted coconut oil
1 tsp vanilla extract
220g white flour
60g whole grain flour or spelled flour
1 tsp baking soda
½ tsp salt
½ tsp cinnamon
50g dark chocolate chips
1 banana for topping (optional)
Directions
Preheat oven to 175 degrees celsius and line a loaf pan with parchment paper.
Place your choice of plant milk together with the apple cider vinegar in a small bowl. Stir and set aside. Place bananas in a large mixing bowl and with a potato masher or fork mash well. Add in the syrup, oil and vanilla and stir until well combined. Now add the plant milk with the apple cider vinegar. Next add the flour, baking soda, salt and cinnamon. Carefully stir until barely combined; take care to not overmix the mixture.
Last fold in the chocolate chips/chunks and pour the mixture into a loaf pan. You can slice up one banana and place on top or keep the bread without any extra toppings. Bake for 1 hour and 10 minutes or until a knife comes out clean. Once done remove from the pan. The bread tastes delicious with some vegan butter, especially when still warm.
