Dark Chocolate Brownies

These brownies are seriously decadent and perfect when the chocolate craving comes in. If you have, you can add a dash of almond extract, which gives the brownies a delicious flavor and a little twist. 

I love serving them with either some whipped coconut cream, cream or ice cream. 

You can adjust the recipe for a gluten free or/and vegan version. 


Dark Chocolate Brownies Recipe

gluten free & vegan options 


Ingredients

Serves 8 big pieces or 12 small pieces 


Ingredients


60g natural nut butter (I normally like to use peanut or almond butter) 

60g coconut sugar 

100g maple syrup 

40/50g unsweetened cocoa powder 

50g buckwheat flour for the gluten free option otherwise all purpose flour works as well

60g coconut oil or butter 

1 tsp almond extract (optional, but gives the brownies a really nice flavor) 

2 eggs of 2 flax eggs (2 tbsp ground flax + 6 tablespoons water whisked together, set for 10 mins.) 

50g dark chocolate chips 

30g chopped walnuts (optional) 


Directions 


Preheat the oven to 160 degrees and line a small baking pan with parchment paper.

In a medium bowl, whisk together your nut butter, coconut sugar, maple syrup and melted butter or coconut oil, whisk until it resembles caramel butter. 


Add cocoa powder and slowly whisk until smooth. Scrape down the sides of the bowl as necessary. Add in almond extract and salt and stir a few times to gently incorporate. 


Now add in your flax eggs or eggs and whisk well until well combined, then add your flour and fold until well incorporated and no flour patches remain. 


Gently fold in your chocolate chips and chopped walnuts. Pour the batter into your baking pan. Using a rubber spatula to smooth the batter into an even layer. 


Bake for 25-30 mins. and afterwards let your brownies cool completely (at least for 30 mins.). 

Enjoy with some whipped coconut cream, cream or ice cream.


*You can store your brownies for a few days in the fridge (the consistency just gets slightly harder, so you might want to quickly warm them up before serving).
